Mama Milka’s Brzi Kolac
Whenever my mom is in town, we are assured a tasting of a new recipe that she is saw on YouTube. My mom loves to cook but has never loved to bake (aside from bread). With the help of YouTube, she has warmed up to the idea but is a fan of the quick recipes 😁. The great thing about this recipe is that if you choose if you want both the walnuts and jam or just one. Of course if you decide to make a jam only or walnut only, you’ll want to adjust the amounts.
One of the quick recipes she found is “Brzi kolac sa pekmezom I orasima”. Basically translated to “quick cake with jam and walnuts”. Within 35 minutes, you have a warm and tasty dessert that if not eaten all in a day or so, will be preserved well in the fridge for a week or two.
Ingredients:
6 eggs
12 tablespoons of granulated sugar
12 tablespoons of vegetable oil
12 tablespoons of milk
12 tablespoons of flour
1 package of baking powder (or 2 1/4 tsp)
1 cup of jam (we prefer using a berry jam)**
3/4 cup to 1 cup of chopped walnuts**
**You can make this with walnuts and jam or just one of the two if you prefer. If you remove one, you’ll want to double the amount of the one ingredient.
Directions:
Beat eggs with sugar, add oil, milk, flour and baking powder.
Pour half of the mixture on a greased baking tray and bake in a preheated oven at 380 degrees for about 15 minutes.
When the bottom part of the cake is baked, take it out of the oven and immediately coat it with jam.
Spread the rest of the mixture over the jam.
Bake for another 15-20 minutes at 200 degrees.
Allow the cake to cool and then cut after
Once cooled, sprinkle with powdered sugar and sweeten.
