Nutella Banana Walnut Bread
The amount of times I made unsuccessful banana bread should have caused me to stop trying altogether. But here’s the thing, we LOVE banana bread. We are also really bad about eating the bananas while they’re still nice and yellow so there is that 😁. A friend of mine sent me this recipe and I have managed to make good banana bread each time!
I’ve tried the recipe a few different times and each time changed it up a bit. I think the latest version was my favorite. The original recipe asks for 1 can (8 oz) of crushed pineapples. Although the banana bread didn’t taste like pineapples, the tiny chunks of it weren’t my cup of tea (I took one by one out as I ate). The second time I omitted the pineapples completely and that was pretty good. This time around, I decided to add my own spin to it and put in Nutella! You can’t go wrong with that 🙂. The only thing I would change is add more Nutella.
Ingredients:
1 cup granulated sugar
1/2 tsp. baking soda
1/2 tsp. salt
2 large eggs
1 tsp. vanilla extract
3/4 cups vegetable oil
3-4 mashed bananas
1/2 cup chopped walnuts
1 tbsp of Nutella (or more, all depends on your want for Nutella)
Directions:
Preheat oven to 350 degrees F. Coat a loaf pan with baking spray, or lightly butter and dust with flour. I also recommend putting a strip of parchment paper in the loaf pan to make for easy removal.
In a large bowl, combine flour, sugar, baking soda and salt. In a separate medium bowl, combine eggs, vanilla, vegetable oil, banana and Nutella; mix well. Add wet mixture to dry mixture, stirring just until batter is moistened. Stir in chopped nuts. Pour into loaf pan.
Bake for 1 hour, or until a toothpick inserted into the center comes out clean. Allow bread to cool in pan for 10 minutes before removing to a wire rack.
**My husband had the suggestion that instead of putting the Nutella in with the wet ingredients, to put it in after you put half of the batter in the pan, swirl it around, and pour remaining batter. I will have to try next time and report back.**
