Walnut Strudel aka Strudla sa orasima

At this point, you know we love nutty desserts. This walnut strudel combines two things we love: bread and walnuts. Although it takes about 2 hours to make, it is pretty easy and requires minimal effort. So if you have guests coming or are in the mood for something sweet and want it within the next few hours, this is a good choice!

As you can see, this is a Serbian recipe, but from my research of trying to find a good strudel recipe, it seems that many Eastern and Western European countries lay claim to the strudel. Whether it originated in Germany or one of the Balkan countries, one thing is certain: it’s downright delicious!

Side note: if you don’t like walnuts for the filling, you can use whatever your heart desires.

Ingredients for the dough:

  • 600g of Flour

  • 1/2 TSP of salt

  • 2 TSP of Instant Yeast

  • 3 TSP of Sugar

  • 3 Egg Yolks

  • 100ml of Oil

  • 1 Vanilla Sugar

  • Lemon Zest

  • 1 TBSP of Butter

  • 350-450ml of Milk

Ingredients for walnut filling:

  • 300 grams of ground walnuts

  • 2 packet of vanilla sugar

  • 1-2 tbsp of Nutella (optional)

  • 200 ml milk

Topping:

  • Egg wash (before you bake)

  • Powdered sugar

Directions the dough and assembly:

  1. In a stand mixer: mix 4 3/4 cups of flour, 1/2 tsp of salt, 2 tbsp of instant yeast, 3 tbsp of sugar, 3 egg yolks, 100 ml of vegetable oil, 1 vanilla sugar packet, lemon zest, 1 tbsp of softened butter, 350 ml of milk.

  2. Once it has formed into a dough and is not sticking to the bowl, take it out flour the countertop and knead by hand for 5 minutes.

  3. Place in a bowl and let rise until it doubles.

  4. Set oven to 325F.

  5. Once it has doubled, split the dough into two and roll out into a square. Spread the walnut mixture evenly across the dough.

  6. Roll tightly and once rolled all the way, finish by pinching the ends together.

  7. Baste it with egg wash and let rise for 30 minutes.

  8. Place in the oven and bake for 40 or until golden brown

  9. Let cool for an hour and then sprinkle powdered sugar.

Directions for the walnut filling

  1. Blitz the walnuts until they become flour like (unless you want some crunch then blitz until you get that consistency.

  2. Pour 200 ml of milk and mix

  3. If you want to make one of them chocolatey, add a spoonful of Nutella.
