Homemade Pasta
If you’ve read any of our previous blog posts, you already know we LOVE pasta. I, for one, could eat it every day. Peter has always wanted to try to make his own pasta and this past weekend, he did just that! The great thing about homemade pasta, aside from being homemade, is that it does not require a stupid amount of ingredients but it does require patience and some skill.
Although the recipe we followed used a stand mixer, we decided to go with a pasta machine. We purchased the MARCATO Atlas 150 Pasta Machine from Amazon and it is amazing! Don’t let the price fool you. Sometimes you don’t need the most expensive appliance to make one of the best things in the world.
We paired the fresh pasta with our Not Your Mama’s Bolognese Sauce and it was delicious! The taste of fresh pasta just does not compare to boxed ones. I’ll be honest though, I can’t imagine doing this every week (even though Peter can, but I have to clean the mess up 😄). What’s great about making this attempting this recipe (makes a 1lb worth) is that you’ll have leftover pasta to cook for another time. You can find the how to video on our Instagram page!
Ingredients:
3 large eggs, beaten to blend
2 cups all-purpose flour
1 tablespoon olive oil
1 teaspoon kosher salt
Directions:
Mix eggs, flour, oil, and salt in the bowl of a stand mixer with your hands until a shaggy dough forms.
Knead with dough hook until dough is smooth and elastic, about 10 minutes.
Cover dough with cloth bowl cover and let rest at least 30 minutes.
Cut and roll as desired.
**Do Ahead: Dough can be made 1 day ahead; tightly wrap and chill.
